Zucchini Apple Salad

- 2 medium zucchini, ends removed and diced
- 2 medium apples, core removed and diced
- 2 Tablespoons finely chopped red onion
- 1⁄4 cup toasted pecans
- 2 Tablespoons sunflower oil
- 1 teaspoon lemon juice
- 1 Tablespoon red wine vinegar
- ½ teaspoon honey
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
In a medium bowl, combine zucchini, apples, onion and pecans. Toss until well-combined.
In a small bowl or sealed mason jar, whisk or shake together remaining ingredients. Pour over zucchini mixture and toss until well combined. Add more salt and pepper, if desired.
