Apple Panzanella


1 cup diced bread
½ cup diced apple
1/8 cup dried cranberries
1/8 cup sliced kalamata olives
1/8 cup red onion
2 Tablespoons olive oil
1 Tablespoon lemon juice
Salt to taste


Mix all ingredients together and let sit for a few minutes for bread to absorb oil and lemon juice.
