Popsicles are an easy, healthy dessert to make with your family this summer! Kids will love blending up the ingredients, filling the molds and tasting their veggie-packed treats. Make about 6 popsicles.

Strawberry Beet Popsicles


Ingredients

  • 2 medium beets 
  • 2 cups strawberries, washed and destemmed 
  • ⅔ cup coconut milk 
  • 3 Tablespoons maple syrup from Horner’s Corner 
  • ½ teaspoon vanilla extract
  • Juice of ½ lemon, about 2 Tablespoons 
  • Additional supplies: blender, popsicle molds, popsicle sticks

Instructions

Remove the tops and roots of the beets and scrub them well. If beets have thick skin (typically larger beets), peel them using a vegetable peeler. Cut the beets into 1 ½ inch chunks and roast in oven at 400 degrees for 30-40 minutes, or until easily pierced with a fork. 

Place the cooked beets and all other ingredients into a blender and blend until smooth. Pour mixture into popsicles molds and insert popsicle sticks. Place in the freezer for approximately 3 hours or until frozen.
