Strawberry Beet Popsicles
- 2 medium beets
- 2 cups strawberries, washed and destemmed
- ⅔ cup coconut milk
- 3 Tablespoons maple syrup from Horner’s Corner
- ½ teaspoon vanilla extract
- Juice of ½ lemon, about 2 Tablespoons
- Additional supplies: blender, popsicle molds, popsicle sticks
Remove the tops and roots of the beets and scrub them well. If beets have thick skin (typically larger beets), peel them using a vegetable peeler. Cut the beets into 1 ½ inch chunks and roast in oven at 400 degrees for 30-40 minutes, or until easily pierced with a fork.
Place the cooked beets and all other ingredients into a blender and blend until smooth. Pour mixture into popsicles molds and insert popsicle sticks. Place in the freezer for approximately 3 hours or until frozen.
