Gouda Grilled Cheese Sandwiches
- 6-8 ounces gouda cheese from Prairie Hollow Farm ($6)
- 8 slices complete whole wheat bread from Baker’s Field Flour and Bread (about 3/4 loaf, $3.75)
- 2 Tablespoons cooking oil or butter ($0.25)
- Leftover garlicky greens (optional)

Slice gouda cheese into 1/8- inch thick slices, and place slices on one piece of bread to cover entire slice. Spread 2 tablespoons of the garlicky greens onto cheese, and sandwich with second slice of bread.
Add 1/2 Tablespoon oil to a skillet per sandwich, and rub both sides of the sandwich on the skillet to coat. Cook sandwich on low heat for 3-4 minutes per side. Remove sandwich when bread is toasted and cheese is melted.
