Make 4-6 servings.
- 3 medium beets, peeled, ends trimmed, and diced
- 2 Valencia oranges, juice and zest
- 1 lime, juice and zest
- 2 tablespoons olive oil
- 1/8 teaspoon salt (or more to taste*)
- 1/2 cup minced green onions
Place diced beets in a medium bowl. In a small bowl, whisk together juice and zest from oranges and lime. Add oil and salt. Whisk. Pour mixture over diced beets. Toss to combine. Sprinkle green onions over salad and serve.

Tip: As you shop for ingredients, select beets that are deep in color with firm roots and smooth skin.
