Lettuce wraps are fun to put together, fun to eat and so easy to make. Adults will want to cook the chicken on the stove, while kids can make the sauce and build the wraps. Makes approximately 16 lettuce wraps, depending on the size of your leaves. Serves about 4.

Chicken Lettuce Wraps


Ingredients

  • 1 pound ground chicken or chopped chicken thigh or breast from Sunshine Harvest Farm
  • 2 cloves garlic
  • 1 bell pepper, diced
  • ½ onion, diced
  • 3 Tablespoons hoisin sauce
  • 3 Tablespoons soy sauce
  • ¼ teaspoon salt
  • 1 Tablespoon sesame oil
  • Head lettuce of your choice

Instructions

Dice bell pepper and onion, and mince garlic. Set aside. In a small bowl, make the sauce by combining half the minced garlic, hoisin sauce, soy sauce and salt. Whisk and set aside.

Add sesame oil to a large pan over medium heat. Add onion, bell pepper, and remaining garlic. Cook for 3-5 minutes, or until pepper and onion begin to soften. Add the ground chicken, using a spatula to crumble the meat. Cook until no longer pink, about 7 minutes. Add sauce to pan and stir to combine. Cook for 2-3 more minutes.

To serve, spoon a small amount of the filling into lettuce leaves. Fold to eat like tacos and enjoy!
