Tomato Jam

Serve as a condiment on burgers and sandwiches or with market bread and cheese.


  • 2 Tablespoons olive oil
  • 1 medium onion, diced
  • 8 cloves garlic, minced
  • 2 inches ginger from Bean Market, peeled and minced
  • 10-12 medium sized tomatoes
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1-2 Tablespoons honey from Ames Farm


In a medium deep skillet, heat olive oil. Add onion, garlic, and ginger and sauté until translucent and soft-about 4 minutes. Add tomatoes, spices and honey and keep at medium high heat so tomatoes will cook down and thicken. Simmer at medium high heat for up to 20 minutes until desired (jam like) consistency.
