In a medium deep skillet, heat olive oil. Add onion, garlic, and ginger and sauté until translucent and soft-about 4 minutes. Add tomatoes, spices and honey and keep at medium high heat so tomatoes will cook down and thicken. Simmer at medium high heat for up to 20 minutes until desired (jam like) consistency
Serve as a condiment on crackers or bread with a delicious cheese.
