By: Meet Your Vegetables Interns
- 4 cups cubed watermelon
- 2 cups diced cucumber
- 1/2 cup chopped fresh mint
- 2 limes, juice only (about 1/4 cup)
- Salt to taste*
In a medium bowl, combine watermelon, cucumber and mint. Cover with lime juice and toss to combine. Season with salt, if desired.
Tip: Yellow watermelon is a farmers market favorite and is often sweeter than its red-fleshed cousin! give it a taste in this cool summer salad.
