Quick Pickled Radishes
By Jenny Breen
- 1 bunch radishes, greens removed and thinly sliced
- 1/2 bunch green onions, cut into small pieces
- 2 teaspoons salt
- 3 Tablespoons rice vinegar, apple cider vinegar, or other light vinegar
- 1 Tablespoon ginger lemon shot from Pure Ginger for You, optional
Combine sliced radishes, chopped green onions and salt in a bowl (don’t be shy, salt helps to draw water out so they can pickle). Cover with vinegar and a splash of ginger shot from Pure Ginger for You for extra flavor. Let sit for about an hour to pickle.
