Heirloom Bean Salsa

Recipe from the 2016 Harvest Social Benefit.


  • 4 cups heirloom beans, cooked
  • 2 Tablespoons olive oil
  • 1 medium onion, diced
  • 1 cob of corn, cut off the cob
  • 1 tomato, diced
  • 4 cloves garlic, minced
  • 1 Tablespoon cumin
  • 1 Tablespoon chili powder
  • 1 teaspoon cinnamon
  • 1 Tablespoon honey
  • 2 teaspoons salt


Heat olive oil in large saucepan or skillet. When hot, add onions, sauté 2-3 minutes, then add corn, garlic and spices. Continue stirring and after 2-3 minutes, add beans, honey and tomatoes, and cook over low heat for about 10 minutes until spices are absorbed and flavors have been distributed. Adjust salt and other spices as desired.
