Fall Harvest Vegetable and Tofu Kebobs

Tofu or other protein
Assorted vegetables (zucchini, summer squash, mushrooms, cherry tomatoes, eggplant, peppers, onions, etc)

1/3 cup olive oil
1/2 cup pomegranate molasses
1/4 cup lemon juice
1/4 cup maple syrup
1/4 cup cider or rice vinegar
1 teaspoon salt
2 Tablespoons fresh thyme, minced
4 cloves garlic, minced


Cut multiple vegetables and protein of your choice into 1 inch cubes.
Combine marinate ingredients. Marinate for at least an hour and as long as overnight
Place vegetables on skewers, cook in oven or over grill for about 15-20 minutes until caramelized and charred.
