Spinach Salad with Sweet & Sour Bacon Dressing

Recipe from Prairie Hollow Farm. Serves 4-6. For a heartier salad, add either diced hard boiled eggs or diced cooked chicken breast.


Ingredients

  • 1/2 pound spinach
  • 2-4 ounces crumbled feta or other cheese from Prairie Hollow Farm
  • About 2 cups chopped seasonal vegetables and/or fruit like radishes, salad turnips, apples or pears
  • Boiled eggs, optional
  • Cooked chicken, optional

For the dressing

  • 2 slices bacon, diced
  • Freshly ground black pepper
  • 1/4 teaspoon ground mustard
  • 1/2 teaspoon paprika
  • 3/4 cup boiling water
  • 2 Tablespoon cider vinegar
  • 1 Tablespoon brown sugar
  • 1 Tablespoon flour
  • 1/2 teaspoon salt

Instructions

Wash and dry spinach. Roughly chop if needed and combine with remaining salad ingredients. Set asside.

Next make the dressing. Fry bacon until crisp and golden brown. With slotted spoon transfer bacon to paper towel and reserve. Whisk flour into bacon drippings and cook over medium heat for 1 or 2 minutes. Remove from heat and slowly whisk in boiling water, vinegar, sugar, salt, paprika, mustard and pepper to taste. Return to medium heat and, stirring constantly, cook for 2 minutes, until sauce is smooth and thick. Taste and adjust seasoning. Add bacon to sauce and heat through. Add to salad and serve immediately.
