Cabbage Salad


1/2 green cabbage, sliced thinly
1 bunch radishes, greens removed (save for eating!) sliced thinly
1 red onion, sliced thinly
1 Tablespoon salt
1 Tablespoon maple syrup
1/2 cup rice, apple cider or sherry vinegar, or a combination


Combine together in a bowl, and mix well with hands.  Let sit about 1 hour to tenderize
Optional: slice radish greens thinly and add to salad
