Chocolate Cinnamon Zucchini Bread

Recipe by Kari Strickland, Bread Festival 2018 Showcase Baker.

This is a recipe my mom taught me as a kid, using zucchini first from her garden and now from mine.

Ingredients

  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 Tablespoon cocoa powder
  • 2 cups zucchini, grated and drained of excess liquid
  • 1 cup oil
  • 3 eggs, lightly beaten
  • 2 Tablespoons vanilla
  • ½ to 1 cup chocolate chips

Method

Preheat oven to 350.

Combine flour, cinnamon, sugar, baking soda and salt in a large bowl. Set aside. Combine zucchini, oil, eggs and vanilla in a separate bowl. Pour into dry ingredients and mix until well incorporated. Fold in chocolate chips.

Pour in a bread tin, and bake for 60 minutes.
