Cauliflower Tabouli

What’s cookin’? Cauliflower


When is it in season? Summer



1 head cauliflower                    ½ cucumber              Spices (optional)

1 bunch parsely                        1 lemon                      (cinnamon, nutmeg, cloves, etc.)

1 large tomato                           olive oil

4 green onions                        salt + pepper


Finely chop the cauliflower (you can use a food processor). Add about 1T olive oil to a pan and sauté the cauliflower with salt and pepper to taste. Allow to cool. Chop parsley, tomato, green onion, and cucumber to desired size. Mix cauliflower and vegetables in a large bowl. Add juice from one lemon and 4T olive oil. Add lemon zest and optional spices to taste.
