Meet Your Vegetables, led by the Market’s nutrition interns, is a sampling event at our summer markets featuring easy and seasonal recipes using raw and often underutilized vegetables. Stop by the booth June through August to taste delicious samples, talk about ways to incorporate more local vegetables in your diet and get a recipe to take home! In 2017, our interns created and handed out over 3,000 healthy samples and recipes to market customers!
This experience was very unique for me, as I felt very connected to the food and the recipes we created, which is not something that is emphasized in many nutrition classes.
As part of the internship, we encourage students to develop their professional and public voice by writing nutrition articles, interacting with market-goers, networking with health care professionals from the programs sponsor: Allina Health and participating in various other projects. Interested in becoming one of our interns?
We encourage Nutrition and Public Health students interested in learning more about the local food scene to apply! Get experience creating and testing recipes, working and networking with health care professionals, writing nutrition articles for our website, and educating the public on how to incorporate more vegetables into their diet.
