Refreshing Cucumber Salad

- 1 cup chopped cucumber
- 1/4 teaspoon salt
- 1/2 teaspoon sesame oil
- 1 handful fresh cilantro, chopped
- 1 teaspoon rice vinegar* (optional)
- 1 garlic clove*, minced (optional)
- chili oil or dried red pepper flakes*, to taste (optional)
*Optional ingredients not included in Nutrition Facts.
Place the chopped cucumber in a medium bowl. In a small bowl or small jar, add remaining ingredients to make a dressing. Add optional ingredients to the dressing for additional flavor if desired. Stir or shake the sealed jar until well-combined. Pour the dressing over cucumber, and enjoy!
