Mixed Green Salad with Sesame Ginger Dressing

By MCFM Nutrition Interns

Consider topping your salad with sesame seeds or crisp, sweet apples sliced into thin matchsticks or using one of Horner's Corner's fruit-infused maple syrups for additional flavor! Serves 4.

Ingredients

  • ¼ cup sunflower, avocado or other neutral oil
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger – minced
  • 3 Tablespoons apple cider vinegar
  • 1 Tablespoon maple syrup
  • ½ tsp salt or to taste
  • Mixed greens, for serving (salad mix, lettuce, baby kale, arugula, Swiss chard, etc.)

Instructions

In a small bowl or glass jar with lid mix or shake together all ingredients until well combined. Toss with greens to lightly coat and serve immediately.

Dressing keeps for several days in the refrigerator but will separate. Shake or whisk ingredients before enjoying again.
