The Wedge Community Co-ops joined us at the Market on June 29th and showed us how to make a delicious platter featuring green tahini dressing. Grab some farm fresh ingredients and give it a try the next time you’re at the Market!
Market Platter with Green Tahini Dressing

Ingredients
For the platter:
- Eggs, soft or hard boiled, peeled and halved
- Radishes, trimmed
- Cherry or grape tomatoes, halved
- Cucumbers, sliced
- Green beans, blanched and cooled
- Small potatoes, boiled, cooled and halved
- Other fresh produce items you love
- Baguette (we recommend Baker’s Field Filone)
For the Green Tahini Dressing:
- 4 packed cups fresh herbs, include tender stems. Parsley, tarragon, cilantro, dill, mint are all
good. - 3 scallions, trimmed and cut into 1 inch pieces
- ½ cup tahini
- Juice of two lemons – about ¼ cup
- 2 tablespoons honey from Ames Farm
- 2 teaspoons salt
- 1 teaspoon pepper
- Pinch of chili flakes
- Water – ½ cup for dip, 1 cup for dressing
Instructions
In a quart mason jar, pack herbs and all ingredients except water. Using a stick (immersion)
blender, chop ingredients. Add ½ cup water and blend well. Add up to ½ cup more if thinner
consistency is desired. Taste and correct seasoning as needed. Dressing can be made in a blender or food processor as well.
Arrange items on a large platter or board and serve drizzled with the dressing, or use the dip version in
a bowl in the middle of the platter. Enjoy!
