Kale with Lemon Tahini Dressing

Serves 4.


Ingredients

  • 1 large bunch kale, stems removed and leaves chopped (about 6 cups
  • Juice of ½ a lemon (about 2 Tablespoons)
  • 2 Tablespoons tahini
  • 2 Tablespoons olive oil
  • ¼ teaspoon salt
  • Water

Instructions

Place chopped kale leaves in a large bowl. In a small bowl or sealed mason jar, whisk or shake together lemon juice, tahini, oil and salt until creamy. Add water, 1 teaspoon at a time, until dressing reaches desired consistency. Pour over kale and toss until well-coated. Enjoy!

Tip: You can substitute any other green (arugula, lettuce, spinach) instead of kale.
