Chef Mimi Selam of Mimi’s Cooking Class joined us at MCFM recently and showed us how to make two Ethiopian and Eritrean dishes, Misir Wot (lentil sauce) and Gomen (a vegetable dish made with cabbage and carrots). Gomen (Cabbage & Carrot Dish)
Ingredients
- 1 tablespoon oil
- 2 large carrots, sliced finely
- ½ onion, diced
- ½ teaspoon Turmeric
- ½ can tomato sauce (8 ounces)
- ½ small cabbage, shredded
- ½ teaspoon ginger powder (or 1 tsp fresh ginger, minced)
- 2 cloves of garlic minced (or ½ teaspoon garlic powder)
- 1 Serrano pepper cut in half or sliced
- Salt and pepper to taste
- Water
- Serve with Injera bread or grain of choice
Instructions
- Add oil to a medium pan on medium heat.
- Add onions and carrots, sauté until soft.
- Add turmeric, stir.
- Add ½ can of tomato sauce, stir.
- Add shredded cabbage and cook, stirring, for about 2 minutes.
- Add ginger and garlic. Stir. Cook 2 minutes on medium heat.
- Season with salt and pepper, to taste.
- Add water, as needed, for desired amount of sauce.
- Cover as the steam cooks cabbage for about 3 minutes on low heat.
- Turn heat off. Enjoy with Injera bread, cous cous, brown rice or another type of bread. Enjoy!!
