A simple hearty stew that only requires a large cooking pot. Serve it hot over rice, barley, couscous or pasta. Serves 4-6
Ingredients
- I large onion, chopped
- 1 clove garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, sliced into rounds
- 2 Tbsp vegetable oil
- 3 cups water
- 1.5 cups dry lentils
- 3 apples, cored and chopped into cubes
- 2 tsp curry powder
Directions
In a soup pot, lightly saute onion, garlic, celery, and carrots in oil. Add the remaining ingredients and bring to boil. Lower heat and simmer until the lentils are tender; about 45 minutes.
