Chimol Radish Salsa

Ingredients
- 1 cup chopped radishes
- 1 cup cherry tomatoes, sliced in half
- ½ cup cilantro, chopped
- 1 bell pepper or ½ cup trimmed green beans, chopped into half inch pieces
- ½ cup red or green onions, chopped into half inch pieces
- 1 Tablespoon lemon or lime juice
- 2 Tablespoons olive oil
- Salt and pepper to taste
Instructions
Combine all ingredients and enjoy! Serve as a dip with tortilla chips and sliced seasonal vegetables, over a toasted baguette with goat cheese like bruschetta or as a topping for tacos and nachos.
